UBE (DIOSCOREA ALATA), OR PURPLE YAM, has long been part of Philippine cuisine, traditionally used in products such as halaya and ice cream. In recent years, however, international interest has taken ube beyond its traditional market. Filipino restaurants, food entrepreneurs, and eventually mainstream food businesses have introduced ube-flavored products to consumers in markets outside the Philippines, contributing to its emergence as a globally recognized flavor.
This growing demand presents an opportunity for the Philippine ube industry, particularly as the country has a long history of ube production and an emerging export presence. However, the expansion of the market has also highlighted constraints in domestic production. Philippine ube production has declined in recent years even as exports have increased, pointing to a widening gap between market demand and the country’s capacity to consistently supply quality raw materials.
The industry’s challenge, therefore, goes beyond capturing a growing international market. Sustaining this momentum will depend on the country’s ability to strengthen production, ensure adequate planting materials, improve productivity and quality, and develop a more coordinated value chain.
